Leftover Turkey and Ham Pie Recipe

Ingredients:

  • 2 cups cooked turkey, chopped
  • 1 cup cooked ham, chopped
  • 2 cups mixed vegetables (peas, carrots, and corn work well)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken or turkey broth
  • 1 cup milk
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 sheet puff pastry (store-bought or homemade)
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Filling:
    • In a large skillet, melt the butter over medium heat.
    • Add the chopped onion and garlic, and sauté until they become translucent.
    • Stir in the flour and cook for about 2 minutes, until it forms a roux.
    • Gradually whisk in the broth and milk, stirring continuously to prevent lumps.
    • Add the chopped turkey, ham, mixed vegetables, thyme, and rosemary.
    • Season with salt and pepper to taste.
    • Let the mixture simmer for about 5-7 minutes until it thickens.
  3. Assemble the Pie:
    • Pour the filling into a pie dish.
    • Roll out the puff pastry sheet to fit over the pie dish.
    • Place the puff pastry over the filling, trimming any excess around the edges.
    • Crimp the edges of the pastry to seal the pie.
    • Cut a few small slits in the pastry to allow steam to escape.
    • Brush the top with the beaten egg for a golden finish.
  4. Bake the Pie:
    • Place the pie in the preheated oven and bake for 25-30 minutes or until the pastry is golden and crispy.
  5. Serve:
    • Allow the pie to cool for a few minutes before serving.
